My name is Kelsey. I have lived in the South my entire life and I have always been an animal lover. My family had 5 acres and many animals, including chickens and a cow, when I was 7 years old. I knew then that I wanted to be a vegetarian and I finally gave up all meat from land animals in 2001, at 15 years old. I gave up seafood 4 years later.
I was in denial for many years about the cruelty of dairy and egg farming and I struggled to stick with veganism. From 2005 until 2009 I tried many times to go vegan but I would break within a week or so and have cheese or ice cream, then give up.
In October 2009 I finally realized that factory farms in the dairy and egg industries are just as horrific as meat farms, and I transitioned slowly to veganism over a month. This time it stuck, I have been vegan for over 8 years and I plan to be vegan for the rest of my life! My husband is nearly vegan and our son will be raised vegan as well.
Southern food is typically full of animal products but with some creativity, it is possible to make a vegan version of just about any dish that you crave!
